A co-branded Caribou Coffee and Einstein Bros. Bagels will open in a new luxury apartment complex that’s been quickly taking shape in Duluth’s Endion neighborhood.

The Endi mixed-use development at 2120 London Road will host the coffee/bagel shop, scheduled to open Nov. 9. It will be the fifth Caribou Coffee and the second Einstein Bros. Bagels location in Duluth. Another joint Caribou and Einstein Bros. shop is set to open within the next several months in the new Kenwood Village development.

Tom Lund and Mark Bell of Harbor Bay Real Estate Advisors are behind the $36-million project at the corner of 21st Avenue East and London Road, which features a 143-unit apartment complex and 14,000 square feet of retail space.

The luxury apartments are aimed at young professionals and empty nesters. Prices start at $1,050 per month for a one bedroom and go up to $4,250 per month for a three bedroom. The complex includes a 4,800-square-foot deck overlooking Lake Superior, a fitness center, pet spa and dog run, among other amenities.

In addition to bagels and coffee, Duluth’s fourth Papa Murphy’s Take ‘N’ Bake Pizza outlet will eventually occupy one of Endi’s other retail spaces. The takeout pizza franchise is currently advertising for employees.
